Pumpkin-Chocolate Chip Snack Cake

  •  1 c (3 oz) all-purpose flour
  • 1 T pumpkin pie spice (I use 1 tsp)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp table salt
  • 1 c. canned unsweetened pumpkin puree
  • 1 c (7 oz) sugar
  • 1/2 c veg oil
  • 2 large eggs
  • 1/2 c (3 oz) mini chocolate chips (I eyeball)


  1. Adjust oven to middle rack, preheat to 350. Grease and flour 8 inch square baking pan.

  2. Whisk dry ingredients (except sugar) together in one bowl

  3. Whisk everything else including sugar (excluding chips) in another bowl.

  4. Gently stir wet into dry.

  5. Stir in chocolate chips (don't overmix or you will get tough cake and nobody wants that).

  6. Bake 35 minutes or until tester in center comes out clean.

  7. Rest in pan on rack for 20 minutes.

  8. Remove from pan and continue cooling on rack one hour.
