Pumpkin-Chocolate Chip Snack Cake
- 1 c (3 oz) all-purpose flour
- 1 T pumpkin pie spice (I use 1 tsp)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp table salt
- 1 c. canned unsweetened pumpkin puree
- 1 c (7 oz) sugar
- 1/2 c veg oil
- 2 large eggs
- 1/2 c (3 oz) mini chocolate chips (I eyeball)
- Adjust oven to middle rack, preheat to 350. Grease and flour 8 inch square baking pan.
- Whisk dry ingredients (except sugar) together in one bowl
- Whisk everything else including sugar (excluding chips) in another bowl.
- Gently stir wet into dry.
- Stir in chocolate chips (don't overmix or you will get tough cake and nobody wants that).
- Bake 35 minutes or until tester in center comes out clean.
- Rest in pan on rack for 20 minutes.
- Remove from pan and continue cooling on rack one hour.
